Zesty Lime Slaw


½ head green cabbage, chopped
½ head red cabbage, chopped
4 green onions, thinly sliced
½ cup cilantro, chopped
½ cup carrot, small dice
½ cup Pine Nuts, Raw Organic toasted
1 lime, zested
1 ½ tablespoons fresh lime juice
1 tablespoon Monk Fruit with Erythritol, Organic Powder
1 teaspoon kosher salt
½ teaspoon ground black pepper
½ cup greek yogurt

Nature’s colorful array of fruits and vegetables is on full display with this Zesty Lime Slaw, an explosion of flavor that includes green and red cabbage, green onions, cilantro, carrots, lime, Greek yogurt, and more. This dish is great as a side salad, and makes a unique topping for sandwiches.


  1. In a large bowl, toss together green cabbage, red cabbage, green onion, cilantro, carrot, and pine nuts.
  2. In a separate bowl, combine lime zest, lime juice, Monk Fruit with Erythritol, salt, pepper and yogurt until mixture is formed.
  3. Pour yogurt mixture over slaw and toss until evenly coated.

**Great side salad or even as a topping on sandwiches.**
