Vegan Cauliflower Mash

1 head cauliflower, chopped
2 tablespoons Liquid Coconut Cooking Oil, Organic
2 tablespoons hemp milk
¼ teaspoon salt
⅛ teaspoon pepper

Potatoes are perfectly suitable for vegetarian dishes, but they’re not known as nutritional powerhouses. The next time you’re thinking of mashed potatoes as a side dish, give this amazing substitute a try. The texture and taste are almost identical to mashed taters, and you get cauliflower’s bounty of healthy nutrients including vitamin C, folic acid, fiber, omega-3 fatty acids, and more!


  1. Steam cauliflower for 10 minutes, until just tender.
  2. In a blender, combine steamed cauliflower, coconut oil, hemp milk, salt, and pepper.
  3. Blend until smooth.
  4. Serve warm and enjoy!
