Turmeric Ginger Moroccan Rice

3 cups water
1 ½ cups basmati rice
2 tablespoons Extra Virgin Olive Oil, Organic
½ cup chopped sweet yellow onion
2 teaspoons minced garlic
½ teaspoon salt
¼ cup Apricots, Unsweetened & Organic
¼ cup Pistachios, Roasted & Salted
2 tablespoons chopped cliantro

  1. Rinse rice under cool water a few times until water runs clear. Bring a saucepan to a boil over medium heat. Turn heat off and add Turmeric Ginger tea bags. Steep for 5 minutes. Discard tea bags.
  2. Add rinsed rice to tea and bring to a boil. Reduce heat to simmer. Stir simmer for 15 minutes uncovered, until rice is tender. Fluff rice with a fork and cover to keep warm.
  3. Heat olive oil over medium heat in a large skillet. Add onion and sauté for 5 minutes. Add garlic and sauté for 1 minute longer.
  4. Stir in cooked rice and apricots. Season with salt. Cook for 2 minutes longer.
  5. Serve rice hot topped with pistachios and cilantro.
