Popped Amaranth Parmesan

Servings: Serves 4


2 teaspoons Virgin Coconut Oil in Glass Jar, Organic
1 ½ cups Amaranth Whole Grain, Organic
¼ cup shaved parmesan
½ teaspoon black pepper

If you love popcorn you’re going to love popped amaranth! Made just like popcorn, popped amaranth is a unique and nutritious snack thanks to amaranth’s naturally occurring protein and fiber. Just put your amaranth in a pan of heated coconut oil and then add some parmesan and black pepper once it’s finished. Just hope you made enough!


  1. In a hot skillet place 2 teaspoons of coconut oil.
  2. Allow the coconut oil to melt and slowly add 2 teaspoons of amaranth at a time, allowing for the grains to pop like popcorn.
  3. Add parmesan and black pepper to the popped amaranth and serve immediately.
