2 medium leftover baked sweet potatoes
1 cup, cooked Quinoa Whole Grain, Organic
2 tablespoons cucumber, chopped
2 tablespoons sun-dried tomatoes, chopped if needed
2 tablespoons green olives, sliced
2 tablespoons feta cheese
2 tablespoons red onions, diced
salt and pepper to taste
fresh parsley, if desired

  1. In a bowl combine your prepared quinoa, cucumber, sun-dried tomatoes, green olives, red onion, feta cheese, salt, pepper, fresh parsley, and leftover turkey, if using.
  2. Evenly divide the mixture between the two sweet potatoes.
