Gluten Free Walnut-Baked Chicken

Servings: Serves 4


1 cup Tapioca Flour, Organic
3 teaspoon salt
2 teaspoons garlic powder
1 teaspoon onion powder
2 eggs, whisked
2 teaspoons water
4 teaspoons BetterStevia® Liquid, Lemon Twist
2 cups Walnuts, Raw & Unsalted
finely chopped
1 cup parsley, finely chopped
3 cloves garlic, chopped
4 boneless, skinless chicken breasts

The mouth-watering combination of chicken and walnuts is popular in many different cultures, and we’re giving this desirable dish a healthy and gluten-free “twist” with our BetterStevia® Lemon Twist liquid and our flavorful, gluten-free Tapioca Flour. It’s a breeze to make and, served with steamed vegetables, this is one meal that’s sure to satisfy.


  1. Place oven at 350° F.
  2. Create 3-step breading system.
  3. In bowl 1 combine tapioca flour, salt, garlic, and onion powder.
  4. In bowl 2 combine egg, water, and stevia.
  5. In bowl 3 combine walnuts, parsley, and garlic
  6. Dust chicken breast in bowl 1, drench in bowl 2, and cover in bowl 3.
  7. Place chicken breast on parchment paper and in the oven for 25 minutes.
  8. Serve warm with steamed vegetables.
