Chocolate-Dipped Caramel Peanut Butter Oat Bites

DIRECTIONS
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, combine peanut butter, Caramel Monk Fruit Liquid Sweetener, ⅓ cup mini chocolate chips, coconut flakes, oats, cinnamon, and salt.
- Using a tablespoon, divide mixture and roll into balls. Place on prepared baking sheet, and freeze for 30 minutes.
- In a medium microwave safe bowl, combine remaining chocolate chips and coconut oil. Microwave in 15 seconds intervals, stirring in between, until melted.
- Dip half of each ball in melted chocolate. Place back on baking sheet and freeze for 10 minutes, or until chocolate sets.
- Serve immediately or store leftovers in a sealed container in the fridge.

- Use a 1 tablespoon scooper for perfect, uniform bites.
- Load these up with even more protein by adding chia seeds and hemp seeds.
- These bite-sized treats were made for customizing. Mix in pretzels or nuts for an added touch of crunch and salt.
