No-Bake Peanut Butter Oatmeal Cookies

INGREDIENTS

1 ½ cups Rolled Oats, Organic
¾ cup creamy natural peanut butter, at room temperature
20 drops BetterStevia® Liquid, Original or 3 tablespoons of BetterStevia® Liquid, Maple
⅛ teaspoon salt

These No-bake peanut butter oatmeal cookies are a delicious, easy-to-make dessert. The cookies are made with a simple blend of rolled oats, peanut butter, BetterStevia® natural sweetener, coconut oil, maple syrup, and salt. Oats are a good source of fiber, and peanut butter is a good source of protein and healthy fat. They make a great breakfast alternative when on the go!

DIRECTIONS

  1. Stir together oats and salt in a mixing bowl. Set aside.
  2. In a separate medium mixing bowl, stir together peanut butter, BetterStevia® Organic Liquid or maple syrup, and coconut oil until smooth.
  3. Stir oats into peanut butter mixture until fully combined and moist. Mixture should hold together when squeezed.
  4. Form 2 tablespoon amounts of dough into cookies and place on a parchment paper lined baking sheet.
  5. Refrigerate for 30 minutes, or until cookies are firm.
