Spinach and Feta Quiche with Almond Flour Crust

This gluten-free quiche features a homemade crust made from our Almond Flour, providing a healthy and tasty base for the rich filling of fresh spinach, aromatic herbs, and creamy feta cheese. Perfect for a hearty breakfast or a light lunch, this quiche is easy to make and serves eight, making it a fantastic option for family gatherings or meal prep for the week.
DIRECTIONS
- Preheat oven to 325ºF and lightly grease a 9-inch pie pan with cooking oil.
- Stir together almond flour and salt in a medium mixing bowl. Stir in egg and melted butter until dough is well moistened. Press dough into prepared pie pan. Poke holes in the bottom of crust with a fork to prevent crust from rising. Bake for 8 minutes on center rack of oven.
- While crust bakes, heat olive oil over medium heat in a large skillet. Add onions and sauté for 4 minutes. Stir in spinach and cook 2 minutes longer. Add garlic, dill and thyme. Cook 1 minute longer. Remove from heat and cool mixture for 5 minutes.
- In a large bowl whisk together eggs, milk, salt and pepper. Stir in spinach mixture and feta cheese.
- Pour filling into par baked crust and return to oven for 35-40 minutes until center is firm. Cover crust with foil if it begins to brown before filling is cooked.
- Remove from oven and cool 5 minutes before slicing.
