Double Chocolate Peppermint Cookies (Soft and Chewy)

Whether you need a cookie recipe for festive season or are just craving a sweet chocolatey treat, indulge your sweet tooth with our soft and chewy Double Chocolate Peppermint Cookies.
DIRECTIONS
- Melt butter and chocolate chips in a double boiler over medium heat until smooth, about 10 minutes. Remove from heat and set aside to cool while preparing other ingredients.
- In a small mixing bowl, combine almond flour, cacao powder, baking soda and sea salt.
- Whisk together egg, Natural Sweetener and BetterStevia Peppermint Cookie Liquid Sweetener in a medium mixing bowl until just well combined, about 10 seconds. Gradually whisk in melted chocolate followed by almond flour mixture. Transfer bowl to freezer for 5 minutes to slightly firm dough.
- While dough chills, preheat oven to 350ºF and line a large baking sheet with parchment paper. Using a cookie scoop, scoop cookies on baking sheet 3 inches apart. Bake for 13-15 minutes. Repeat with remaining dough.
- Sprinkle cookies with flaky sea salt immediately after removing from oven. Cool cookies completely on baking sheet, about 30 minutes.
