Hearty Irish Soda Bread
INGREDIENTS
Soda bread is a quick bread, in which baking soda is substituted for traditional yeast. This creates a heavier texture with lots of air pockets thanks to the reaction of baking soda with the lactic acid in buttermilk. This hearty Irish soda bread recipe is loaded with rustic goodness thanks to dried cherries, sunflower seeds, black chia seeds and flax seeds.
DIRECTIONS
- Preheat oven to 375° F and line a cookie sheet with parchment paper.
- In a large bowl, combine flour, lactose, sunflower seeds, organic black chia seeds, organic golden flax seeds, baking soda, and salt.
- In a separate bowl, combine water, buttermilk powder, egg, citric acid, and dark chocolate liquid.
- One tablespoon at a time, add the butter-infused coconut oil to the dry ingredients, mixing after each addition.
- Add the cherries to the dry mixture and stir until evenly distributed.
- While mixing, slowly pour buttermilk mixture into dry mixture until moist dough is formed.
- Place dough onto a lightly floured surface and gently knead into a large, round loaf.
- Place loaf on prepared cookie sheet and bake in preheated oven for 50 to 55 minutes until golden brown.
- Cool completely, serve, and enjoy!
